Must Wine Bar in Highgate is one of the better bistros around town – with Russell Blaikie in charge that is only to be expected – and I previously written about the excellent and innovative French inspired food on offer. It is also one of the most attractively fitted out bistros as well – elegant lines, and a cool, casual vibe.
However it also a perfect spot just to drop in a have a drink – with a well curated wine list always with a surprise or two to delight the palate. Over 500 wines make up the list and about 2 dozen available by the glass – so you can be sure there is something for everyone here!
Lady FWO and I were on our way to dinner and, as is usual, were running a little ahead of schedule so considered Must just the place to sit back, enjoy a drink and let a little time go by. We grabbed a stool by the open window with a view across the street to the Queens hotel and ordered a couple of glasses of a Pinot Noir from the Yarra Valley – 2016 Arfion – light, bright red in colour it has a fragrant bouquet of cherries and spice. The palate is smooth and savoury, with delightful earthy and varietal notes; an excellent Pinot.
Our drinks completed, we were on our way, but knowing full well we will be back when next in the neighbourhood. Must is a must!
